Sure, ice cream is made for hot summer days, lazing around in the sun, and enjoying the warmer temps, but if this is true, then why does ice cream melt so darn quickly? The question of ice cream’s “staying power” has been on the minds of a collection of researchers led by Jorge Velásquez Cock, a chemical engineer and graduate student at Pontifical Bolivarian University in Medellín, Colombia.

Velásquez Cock lives near a banana-growing region of Colombia. The thick stalk that attaches each banana bunch to the plant’s trunk is typically considered garbage, but these stalks are rich in cellulose.

Cellulose is an ingredient in paper, cellophane, and certain types of fabric but it’s also used in some foods. Since cellulose molecules stretch out and take up more space as they dissolve in water they can significantly increase the viscosity of a liquid.

Velásquez Cock’s study suggests adding banana cellulose might improve the texture of traditional ice cream by delaying the melt. This idea, however, still very much in it theoretical stages. Until a procedure to efficiently pull large amounts of cellulose from banana wastes is developed, we will remain licking rivulets of sweet sticky ice cream from our finger and forearms all summer.

Superstar singer/songwriter, Ed Sheeran is known for many things; his infectious pop tracks, his storied friendship with Taylor Swift, and his eccentric collection of tattoos to name a few. Well, one gelato shop in Ireland is taking Ed up on one of his most injudicious pieces of body art — a tattoo of a classic Heinz 57 label — apparently an homage to Sheeran’s love of the condiment, by crafting a gelato flavor from the famous ketchup.

Gelati Enniscrone and Ballina gelato shop serves the bright red flavor with an added dash of ketchup on top, the result is described as a “frozen bloody mary.”

We’ve seen plenty of wacky ice cream flavors over the years, from Japanese fish balls to mouth numbing Carolina Reaper hot peppers, and on the scale of weirdness, this ketchup flavored gelato registers a bit low but as one Philadelphia reporter confessed, ” I could imagine this being refreshing in the summer, but that drizzle of ketchup..count me out!”

We can’t say we feel very different about this novelty flavor, especially in the dawn of the summer season, when ice cream is at its best and creameries are at their most creative.

The cost of vanilla has been on the rise for years but recently, natural ingredients have increased in demand. As such, vanilla pods have gone from luxury ingredient to precious commodity. Increased demand and shrinking supplies — 80% of the world’s supply of vanilla pods come from Madagascar, which suffered great agricultural damage when Cyclone Enawo destroyed nearly 1/3 of their vanilla plantations last year— result in higher wholesale prices, especially considering how labor intensive vanilla is to harvest.

How will this affect you? Well, Cook’s Illustrated concluded in a 2009 test kitchen study that — in baking, at least — there’s no difference between real and artificial vanilla extract, and considering that vanilla is a three-year harvest, the shortage should likely correct itself over a relatively short amount of time.

It’s possible that many of your favorite artisan, small batch ice creams will be limiting vanilla flavors this season, and your favorite gourmet ingredient will see a dramatic retail price increase, at least for the extent of the shortage.
